Mille-feuille of smoked salmon, lemon whipped cream


Fancy a crispy recipe for Christmas? Try this millefeuille of pastry sheets with organic smoked salmon with a homemade whipped cream.

Preperation

1-Marinated salmon

Preheat your oven to 200 ° C using hot air! Place a bowl and the liquid cream in the freezer. Meanwhile, in a bowl, place the following ingredients: Cut the smoked salmon into small pieces. Squeeze the lemon. Add the chives and a drizzle of olive oil. Salt and pepper.


2-Brick sheets

Superimpose your pastry sheets 2 by 2, brushing with olive oil between each sheet. Cut each double sheet into 4 (like a Camembert). Place the pastry sheets on a baking sheet. Pour a drizzle of olive oil. Bake for 5 min.

3-Whipped cream

While the pastry sheets are cooking, using a grater or a knife, take a little lemon zest (only the rind is yellow, the white is bitter). Take the bowl and the cream out of the freezer. Using an electric mixer, beat the cream until you obtain a whipped cream (whipped cream texture). Add the lemon zest. Salt and pepper.

4-The mille-feuilles

When the pastry sheets are golden, perform the following assembly: on a piece of brick pastry, place a spoonful of whipped cream, marinated salmon, a new pastry sheet, whipped cream, marinated salmon and finish with a new one. piece of brick pastry on top. Repeat the operation to get two mille-feuilles per person. Tip: Make the mille-feuilles at the last moment so that the bricks do not soften. 

5-The salad

In a salad bowl, place the following ingredients: Pour in the olive oil and vinegar. Salt and pepper. Mix well to obtain a vinaigrette. Chop the endive. Cut the apple into thin quarters. Add the arugula.

6-Serve your smoked salmon mille-feuilles with lemon whipped cream, accompanied by the salad.
